Chef Thad Lyman shared a recipe for a sauce he’ll serve with suckling pig he’ll prepare at Brix 25 during the restaurant’s first Thanksgiving dinner. Chef Charlie McManus of Primo Grill gave us the recipes for the Thanksgiving meal he’ll prepare for his family: Slow-roasted fennel crusted pork roast with lemon vinaigrette, creamy parmesan polenta and an arugula salad. We turned to Chef Todd English, renowned restaurateur and author of Cooking in Everyday English, The ABCs of Great Flavor at Home (Oxmoor, 2011), for gourmet-caliber Thanksgiving recipes that will create a memorable holiday menu.

The grill for Thanksgiving turkey? You bet! I can attest that brining and grilling the holiday bird not only results in knee-weakening juicy meat, it also gives the turkey that distinctive smoky flavor that roasting will never deliver.

There’s nothing like some protein with that cheese. This basic recipe is actually made with two regular old Wonder Bread and American cheese sandwiches. After frying the two sandwiches up with lots of butter, place a hamburger patty and any toppings you want between them. For a little extra kick, spice up the meat with some Tobasco or your favorite hot sauce.
